Recipe: Abuelita's Gorditas
“Gorditas de Salsa Verde con Chicharron y Nopales con Papas”

Gorditas are a traditional Mexican dish and can be made with many different types of stuffings and toppings. Many Mexican states such as Morelos and Queretaro prepare them differently. The gorditas in this recipe are filled with pork rinds, green salsa, cactus, and potatoes. You may accompany this dish with your choice of sides, such as rice and beans.
If you walk around the streets of Cuautla Morelos in Mexico, you can find many vendors selling Gorditas. Vendors usually sell Gorditas to help support their families when there is no work out in the fields. The dish is mainly a cheap dish to make and provides income for families in Mexico. Although it is a cheap dish to make it is very tasty and filling.
Recipe for Gorditas (doesn’t include filling)
Makes 8-10 servings
Ingredients:
3 cup of corn flour (Masa)
¼ cup Olive Oil
8 oz or 227g pasteurize cheese
8 oz or 227g Powdered Cotija cheese
3 Tomatoes
1 small Onion
1 Roman Lettuce
16 oz or 454g Sour Cream
Prep:
Mix the cornflour (masa) with water until the flour is until it has a play dough consistency.
Once the flour is fully mixed separate them into 8 to 10 equal parts.
Take one part and make a bowl-like shape and put a small amount- about a tablespoon of pasteurized cheese and close the bowl-like shape into a ball.
Flatten the ball with a tortilla presser.
Prep a small pan with 5 drops of olive oil and heat until oil is hot.
Cook the gordita for 3 minutes on each side.
Once the Gordita is cooked, slice the gordita open and add your favorite stuffing.
Top them off with chopped roman lettuce, onion, tomatoes, sour cream and cotija queso.
Top it off with your favorite salsa.
