Moore bringing 'explosions of flavor' in new role as Chef at Last Stop
The Last Stop Saloon at 209 E. Second Street recently hired Justin Moore as its executive chef.

Justin Moore, new executive chef at Last Stop
THE DALLES, OR December 2022 - Last Stop Saloon is excited to welcome Justin Moore as it’s new Executive Chef.
Last Stop OwnerTodd Carpenter “has expressed his vision for the restaurant as I have expressed mine on what I wanna do food-wise,” said Moore last week in a text conversation. ““I hope to bring some great flavors and a few surprises along the way. But there are not too many details to release at this time.”
But there is this from the press release: “He is passionate about creating food with explosions of flavor that are nostalgic of down-home hearty meals.”
Time to start dropping some bombs!
Justin most recently worked as the Executive Chef at the Baldwin Saloon, and he brings 18 years of experience to Last Stop Saloon.
Inside note: Moore was a hardworking, attentive and conscientious chef at the Baldwin and got great reviews from my daughter Celia who worked as a server with him over the summer. - Tom Peterson.
Where does he get his passion for food?
“From my father, Jeffrey Clyde Moore” Moore said, noting big meals were important to his family. “We had a very large family so gatherings were quite regular.”
“Justin has a wealth of knowledge in all aspects of the kitchen,” said Last Stop owner Todd Carpenter. “His energy and drive will take our Last Stop team to the next level as we finish our expansion next door this spring.”
Justin and his wife Kailah have made their home in the gorge for more than twenty years. Last Stop Saloon is a family restaurant and bar located in historic downtown The Dalles. And it currently occupies a building that has served food and drinks since it was established in 1898. It has been home to many bars and restaurants over the years as well as a hotel and we understand a brothel or “place of negotiable affection.”

It has been called the “Hotel Albert”, has been occupied by the “Citizens National Bank, and the French & Community Bank. The hotel also had a first-class grill in the early 1900s, and at one time, it was the home of the “Celilo Room,” which was a private bar.
The Saloon has been remodeled taking care to highlight the historic external features of the building while also keeping intact architectural design elements that were hidden by years of reconstruction and use.
In addition to American fare the Last Stop offers 20-plus selections of local craft beers as well as one of the largest liquor selections in the Columbia River Gorge.
