Understanding the Ukraine through Food

Before the war broke out, I picked up this cookbook to take a look at some options for getting some variety in my diet. Besides that, the recent media coverage of all things Ukraine gave me an “a-ha” moment in wanting to learn something about what everyone was talking about.

To my surprise, each chapter is prefaced by a well-written historical account of the movement of people throughout the regions and a wonderful description of what kind of food winds up on their dinner tables.

Those essays then led to spending a few hours looking at all of the online map information that depicts the border changes that have occurred in Ukraine since some Incredibly Distant Era of Time.

Politically, the book only takes us up to 1973, but that’s OK with me. I’m not really interested in what the explosion of Fast Food outlets has done to traditional fare.

Pouring over the book, it seems most recipes are introduced by information that in some cases is uncannily and eerily relevant to today’s crisis. For example, we learn that the famous dish Chicken Kyiv took its name from “Russia’s third-largest city,” the once capital of Russia and capital of the Ukrainian republic. It goes on to relate the importance the city had in medieval times.

Like much of the world, I am deeply saddened by Russia’s aggression. One would hope and insist in modern times that if people in a country wanted to become part of another country, there would be something called “A Vote.”

So, I’m Voting No on the war. And I’m Voting Yes on Ukrainian Cherry Dumplings.
